So how do we extract juice from the fruits and vegetables? We use a method called cold pressing. This is an alternative to centrifugal juicing where there is a metal blade that spins at high speeds. The high speeds cause friction that heats the produce, destroying many enzymes. It also oxidizes the nutrients, reducing the nutrients.

Cold pressing uses two metal plates to crush and press the produce which creates little to no friction, resulting in a much more nutrient and enzyme rich juice!

One of the concerns there are about juice is that it is susceptible to some form of contamination. Also, the shelf life of raw juice is only 3 days. To make sure there is no contamination, and to extend the shelf life, juice companies have to treat their juice in a way to reduce the risk and extended the shelf life. The most common approach is to pasteurize the juice, applying heat to the produce before it is bottled. They also add some preservatives so the taste and color are not affected. However, the heat kills much of the nutrients and enzymes. Not only that, the heat is applied before the juice is bottled, so there is risk of recontamination before it is bottled.

Thankfully, there is a better way. HPP is a relatively new way of preserving the juice and extending the shelf life. We apply pressure of 87,000 psi for about two minutes. There are many advantages to this route. First, our juice is not exposed to heat and therefore has a much higher nutrient and enzyme content compared to pasteurized juice. Also, the pressure is applied after the juice is bottled, eliminating the risk of recontamination. And finally, we do not have to add any preservatives; HPP kills the bad bacteria, but leaves the vitamins and nutrients virtually untouched. It also maintains the color and the flavor amazingly! Now the juice can be refrigerated and drank for up to 45 days after it’s juiced!

To top it off, HPP is extremely environmentally friendly. All that is required to HPP is electricity and water (and the water is recycled!)

A survey from the New Food Magazine was conducted to test the differences between HPP juice vs. fresh juice. Consumers rated many categories of each juice. Here were their responses. As you can see, the affect HPP has on flavor, sweetness, color and many other important factor is almost unnoticeable.

I normally don’t drink juice. They are pasteurized with heat, destroying most of the nutrients in the fruits and veggies, making them another source of what we call “empty carbohydrates.” They often have added sugars and preservatives, things I try to avoid as much as possible.
